Spinach and Mushroom Lasagne

My children and I make this together. They love breaking up the lasagne sheets and mixing the sauce mix.  
Serves 4-6
Blanch the spinach in one pan and gently fry the mushrooms and garlic in another with a little oil. Once cooked, stir the two together.
Add some pepper.
Make up a packet cheese sauce as directed on packet*Stir half of the cheese sauce into the spinach and mushroom mixture.
Pour some mixture into a lasagne dish, then layer with lasagne sheets.
Add another layer of sauce mixture then more lasagne sheets.
When finished pour on left over cheese sauce mixture.
Cook in the oven (180 C/Gas 4 for 45-50 mins) until pasta is cooked then sprinkle with cheddar cheese.
Serve with home-made potato wedges and salad.

*Variations: Use home made cheese sauce instead of a packet mix.
Add some fresh chopped basil to the mixture before cooking.
Use 250g spinach plus other chopped vegetables such as courgette and pepper. Cook the other veg in the same pan as the mushrooms until slightly softened.
