Colcannon


Here is my recipe for a traditional Irish potato dish, which is commonly served at Halloween or St Patrick's Day.
  • 6 medium potatoes
  • 2 handfuls of washed cabbage/curly kale or spinach
  • 1 small onion or 3 spring onions
  • 2 tsp butter/low fat spread
  • Splash of milk
  • Seasoning to taste
Wash, peel and cube potatoes. Wash and chop greens and chop onion. Bring potatoes to boil and cook for about 15 mins. Then add chopped greens and onion.
Cook until potatoes are soft. Mash to desired consistency, add butter, milk and seasoning. Grated cheese or parsley are tasty alternative additions.
Serve warm with gammon and baby carrots or as a delicious comfort food all on its own.
