 Cheat’s Bolognese Bake

Method:

  • Brown 500g lean beef mince, remove from the pan and keep warm.
  • Add 1 chopped onion, 2 chopped medium carrots, 2 chopped garlic cloves and 150g sliced mushrooms to the pan with 1/2 tbsp sunflower oil and fry until golden.
  • Add the mince back in with 800g can Heinz Cream of Tomato soup1 1/2 tbsps Lea & Perrins Worcestershire sauce, 1 tbsp dried mixed herbs, 1 low salt beef stock cube, 2 tbsps Heinz Tomato Ketchup and 250g cherry tomatoes.
  • Gently simmer for 15 - 20 minutes, stirring occasionally and squashing the tomatoes as they cook.
  • Cook 500g penne pasta, drain and toss through the bolognese sauce, season, place in an ovenproof dish and top with 50g grated reduced fat cheese and grill until melted and golden.
  • Tip: Any leftovers are great the following day.

  • 250g cherry tomatoes
  • 2 garlic cloves
  • 1/2 tbsp sunflower oil
  • 1 1/2 tbsps Lea & Perrins Worcestershire sauce
  • 1 tbsp dried mixed herbs
  • 1 low salt beef stock cube
  • 2 tbsps Heinz Tomato Ketchup
  • 50g grated reduced fat cheese
