SEAFOOD LASAGNE

You can’t get much easier than this! A packet of mixed seafood, a couple of tubs of fresh ready-made sauces and some fresh lasagna sheets combine to make a rich and indulgent supper dish

INGREDIENTS

  • 300g tub fresh four-cheese sauce
  • 250g packet fresh lasagne, containing 12 sheets
  • 300g tub fresh tomato sauce
  • 450g packet frozen seafood mix, thawed
  • 125g (4oz) Cheddar cheese, grated

METHOD

  1. 1Preheat the oven to 200°C (180°C fan oven) mark 6. Spoon 1tbsp cheese sauce into each of the bases of four 300ml (1⁄2 pint) ovenproof dishes. Put one lasagne sheet in the centre of each dish.
  2. 2Spoon the tomato sauce into a large bowl and add the thawed seafood. Season generously with salt and freshly ground black pepper and stir well. Divide half the seafood mixture among the four dishes, spooning it over the lasagne sheet, then top each portion with 1tbsp cheese sauce.
  3. 3Repeat the layers, finishing with a sheet of lasagne and topping with the remaining cheese sauce. Sprinkle with grated Cheddar cheese and bake for 25–30min until bubbling and golden.
