Spanish Chorizo Pasta Sauce


Ingredients

  • 1 tbsp extra virgin olive oil
  • 800g passata / tinned tomatoes
  • 4 crushed garlic cloves
  • 2 tsp fresh rosemary, finely chopped
  • 2 tsp caster sugar
  • 225g sliced chorizo sausage
  • pinch chilli flakes (to taste)
  • 175ml double cream
  • 2 tbsp fresh chopped parsley
  • 500g pasta (any shape)
  • 50g freshly grated parmesan
  • sea salt and black pepper to taste
