Chicken & chorizo stew



This is a fab meal done in the same pot and with stacks of flavour.Chicken & chorizo stew
Fry onion until soft & golden. Add chicken and cook for a couple of minutes each side.
Meanwhile cut the chorizo into chunks and add to pot. Fry for 2-3 minutes until the "juices" start coming out. At this point you may want to add some chilli powder to however hot you like it.
Add tomatoes, stock, tomato puree, garlic & a dash of red wine if there's some open!
Add potatoes, cover pan and simmer for about 30-40 mins, or until potatoes and chicken are almost cooked.
About 10 mins towards end of cooking add black olives.  
Top with soured cream and fresh coriander.
Serve with bread drizzled with olive oil.
*This dish can also be cooked inyour slow cooker - add all ingredients (except olives) to the slow cooker. Cook for 8 hours on low. Add the olives 30 minutes before serving.
Variation - add a chopped yellow or red pepper, courgette our mushrooms.
