Sausage, bean and sweet potato casserole



Sausage, bean and sweet potato casseroleThis is both healthy and delicious - a firm favourite in our house.
For a vegetarian version, just use veggie sausages instead of pork sausages.
Total: £4.87*

Grill the sausages and chop into chunks, meanwhile peel, chop into chunks and par boil the sweet potatoes (for about 5 mins or so). 
Sweat the onions then put into a casserole dish with the chopped tomatoes, cannellini beans, sweetcorn, potatoes and sausage chunks, mix together and put into the oven until everything bubbles together.
Serve in bowls.
