- Shop-bought ready-rolled pastry is brilliant - and no one will ever know the creamy hollandaise sauce isn’t home-made
INGREDIENTS
- 375g packet ready-rolled puff pastry
- 8 small sprigs fresh dill
- 4 fresh salmon fillets, around 200g (7oz) each, skinned
- 1 medium egg, beaten
- A little butter to grease
- 130g tub fresh hollandaise
METHOD
- Preheat the oven to 200°C (180°C fan oven) mark 6. Open out the pastry and cut it into four neat rectangles.
- Lay two dill sprigs diagonally across each pastry square, then put the fish on top of the dill. Brush the edges of the pastry with the beaten egg.
- Lift up the bottom left-hand corner and top right-hand corner of the pastry and bring together, then pinch firmly to secure the edges. Put on a greased baking sheet. Bake for 25–30min.
- Microwave the hollandaise sauce on medium for 1min, stir, then repeat for 20sec (based on a 900W oven). Serve each salmon parcel with a swirl of sauce.
