Preheat the oven to 200°C (180°C fan oven), gas 6. Chop 1 onion and 2 carrots, and
fry with 500g lean minced beef, stirring until lightly browned. Add 300ml beef stock, 1-2 tbsp Worcestershire sauce and a bay leaf or bouquet garni. Cook gently for 15 minutes. Meanwhile, slice 600g new potatoes, then par-boil for 8 minutes or until tender. Drain. Remove the bay leaf or bouquet garni, and stir a 420g can baked beans into the mince. Warm through. Spoon half the mince and bean mixture into an ovenproof dish and top with half the potato slices. Repeat with the remaining mince and potato slices. Sprinkle 50g grated mature Cheddar cheese over the top, then bake for 20 minutes or until golden and bubbling.
