Onion Bhaji


ONION BHAJI
 
ingredients
2-3 med onions
1/4 teaspoon garlic paste
1/4 teaspoon ginger paste
2 tablespoons gram flour
1 tablespoon rice flour
1 tablespoon coriander
1 teaspoon garam masala
oil for deep frying
salt to taste
 
method
1. put oil in o wok or deep fat fryer and leave on a medium heat.
2. while the oil is heating, peel and thinly slice the onions, chop coriander, add garlic and ginger paste, salt, garam masala, gram flour and rice flour, add just a drop of water ( say 2 tablespoons ) and mix until everything sticks together ( hands are best )
3. check the oil by dropping a little of the mixture into it, if the onions stick together that's fine, but if they separate add a little more gram flour until mixture sticks
4. spoon or use hands to pick up the mix, about a tablespoon full and put into the hot oil. fry until golden brown, turning occasionally
5. when fried remove with slotted spoon and drain on kitchen paper, serve immediately with salad but can be microwaved to warm through
