Lemony prawn pasta

Ingredients

  • 400g (14oz) Everyday Value penne pasta
  • 2 Everyday Value courgettes, chopped
  • 200g (7oz) Everyday Value cooked & peeled prawns
  • grated rind of 1 Everyday Value lemon
  • Everyday Value ground black pepper
  • 2tbsp chopped fresh chives
  • 200g (7oz) Everyday Value soft cheese
Each serving contains 515 calories, 5.8g sugar, 9.8g fat, 5.2g saturates and 0.8g salt.

Method

Boil the Everyday Value pasta and courgettes in a large pan of water for 10-12 minutes until tender. Meanwhile, put the Everyday Value soft cheese in a small pan and add 3tbsp of water. Stir over a low heat until the cheese has melted.
Add the Everyday Value prawns to the cheese sauce and gently heat for 2 minutes. Remove from the heat, stir in the lemon rind and season.
Drain the pasta and return to the pan. Gently stir through the prawn sauce and serve immediately. Top with a sprinkle of chives.
