Spicy Prawn Jackets

Ingredients
- 4 sweet potatoes of equal size
- 1 tsp olive oil
- 0.25 large red chilli, deseeded and finely chopped
- 225 g cooked tiger prawns
- 100 g Philadelphia Extra Light
- 1 tbsp chopped parsley
- black pepper to taste
- 100 g watercress
Instructions
Bake the potatoes for 40-50 minutes at Gas 7, 220 C degrees until cooked through. |
Heat the oil in a pan, add the chilli and garlic and cook for 1 minute, stir in the prawns and cook for a further 1-2 minutes. |
Add the Philly and parsley, heat to allow the Philly to melt then season to taste. Cut open the potatoes and spoon over the prawn mixture. Serve with a handful of watercress. |
Philly's tips
- To speed up the cooking time pop the potatoes in the microwave for a few minutes to soften slightly.
